They handle rare and valuable bone-in short-horned beef, and the photo was sent to us by the manager after the delivery of our aging chamber (ribs and thighs). This aging chamber is not the usual dry aging but is closer to a withering process, squeezing the air to the limit, resulting in a higher humidity and lower airflow. In the withering process, a mold resembling cotton appears, and as this mold dries out, the center of the rib becomes indented. The previous wine cellar had a glass box assembled during the interior construction, and while it managed temperature control with air conditioning, it was obviously insufficient in managing both temperature and humidity, leading to the need for replacement. The aging chamber we delivered measures W1,800×D750×H2,430mm (23 cm taller than the standard height), and naturally, there was only one place it could fit, requiring major construction to remove the glass at the front of the store to get it in. With this size of aging chamber, it can hold approximately 400 kg of aged meat. Since there was a request to place the showcase next to the cash register, we opted for a sliding door. With a sliding door, it allows for customer service where customers can purchase while standing right next to the showcase and receiving product explanations. Oya stone is a natural stone that helps manage humidity, maintaining a temperature of 16 degrees in summer and 10 degrees in winter, with a humidity level of about 90 percent throughout the year. In our company, similar to our meat aging chambers, we manage humidity without adding moisture (though we do perform dehumidification). Typically, we use special cooling devices and controllers to manage temperature and humidity (to prevent excessive humidity), but in this case, we intentionally did not include a dehumidification function, as high humidity is considered beneficial. The cellar features a door and part of the structure made of glass, with Oya stone covering the interior and exterior. Since they wanted to connect the kitchen and the store, we used double-sided glass and added a door on the kitchen side to ensure that customers cannot see inside the kitchen, putting extra effort into the glass design. While the kitchen is not visible from the store, the interior of the chamber is clearly visible from the kitchen, making it easy to see where each type of meat is located, allowing for quick opening and closing of the door. The wine cellar and aging room both measure 2,500mm in width and 2,500mm in height. While not particularly large for a wine cellar, the double-opening doors allow for a storage capacity of over 300 bottles of wine, nearly double the usual amount. Before relocating, the establishment had been aging meat in a prefabricated aging room, and now focuses on a 28-day aging process in the New York style. The conditions for this chamber were an average humidity of 80% with an internal temperature of 1°C, and air circulation within the chamber. It is honestly difficult to meet these conditions with a maturation chamber that has a large internal volume and a high height. Simply adding a humidifier would cause the internal cooler to frost up, leading to the growth of bacteria. This was made possible by our company, which has numerous achievements. Additionally, we received a request from the kitchen side to monitor the internal conditions, so we used double-sided glass. The chef can always check the inside of the maturation chamber through the glass on the back.
