This time, we received a request to age A4 or A5 grade black wagyu beef in the dry-aging cabinet, so we maintained a low temperature and high humidity (1°C, 80%) and set the airflow to be gentler compared to traditional dry aging. The dimensions are W1,800 × D800 × H2,200, making it the largest in our planned sizes, and its substantial presence is impressive.
