The Yuzu fruit, a specialty product of Yatsushiro City in Kumamoto Prefecture, is in season from January to March. To ensure that you can enjoy the deliciousness of Yuzu at any time, we process it during its peak season when it is exceptionally tasty. Yuzu has a fragrant yellow outer skin and thick white pith, so the processing and packaging are mostly done by hand. We process the fragrant outer skin, the bitter pith, and the refreshing, tangy flesh into a paste. After separating the Yuzu into its outer skin, pith, and flesh, we extract the best qualities of each through a cooking process and then combine them for adjustment. The completed paste is briefly frozen, and after cooking only the amount ordered, it is packaged and shipped. The deliciousness of Yuzu paste comes from processing it during the Yuzu's peak season and using a method that utilizes the Yuzu inherited from local farmers.
