Hello, I am the knife shop uncle. Our company has been a knife manufacturer in Seki City, one of the world's three major knife production areas, for over 100 years, honing our skills. We have received numerous inquiries about cutting various materials, and among them, I would like to discuss something that has been on my mind. That is, "Is the thickness and size of that cutting machine really necessary?" What do I mean by this? Depending on the cutting machine owned by the customer, there are cases where the proposed knife cannot be installed. Even though the knife we are introducing is clearly superior to the current specifications, it cannot be installed simply because the size of the knife does not fit. The design of the size is clearly over-spec for the material being cut... I can't help but wonder what was considered during the machine design phase. There is an optimal knife size for cutting, which ultimately results in fewer defects.
