This document introduces the establishment of an automatic measurement method for analyzing food nutritional components in soy sauce using the "NIR Nutrition Analyzer." We conducted examinations on the measurement of food nutritional components such as "calories," "protein," "lipids," "carbohydrates," and "equivalent salt content."
