Trans fatty acids are unsaturated fatty acids that contain double bonds in a trans configuration within their chemical structure. The double bonds in unsaturated fatty acids found in plant oils produced in nature typically exist in a cis configuration. However, in solid fat products such as margarine and shortening, trans isomers are generated during the necessary hydrogenation process, resulting in trans fatty acids being included as by-products. In Japan, while their use is not currently prohibited, many companies are announcing reductions in usage and self-regulation from the perspective of food safety, making the rapid quantification of trans fatty acid content increasingly essential.
