As a choice of gasket material, considering the balance of hygiene, strength against door opening and closing in high-temperature environments, and cost, silicone rubber emerges as the most viable option. However, steam-resistant materials have poor heat resistance above 200°C, making practical use in steam convection ovens unfeasible.
