When the fryer is in operation, the temperature of the cooking oil is between 150 and 200°C, resulting in combustion exhaust gas temperatures exceeding 300°C. This exhaust heat is recovered by a heat exchanger and effectively utilized for preheating combustion air. The exhaust heat can be reduced to below 100°C.
