We have introduced the "Big Pole" to Nyuzensuisan Co., Ltd., located in Toyama Prefecture. The salt produced through the Big Pole is said to dissolve quickly in the mouth, spreading umami flavor. Using deep seawater sourced from the deep sea off Toyama Port, we first pass it through the Big Pole, and then again during the tank discharge of the brine after removing calcium sulfate from the high-concentration brine. Additionally, it is used in three processes, including passing it through after extracting salt from the raw nigari to produce refined nigari. Furthermore, we have attached the Big Pole to well water, which has improved the thermal efficiency of the boiler and reduced fuel costs. It seems that the thermal efficiency of the deep seawater itself has also changed.
