**Composition of Palm Oil** CPO is an orange-colored solid fat at room temperature, with a unique aroma and sweetness. The main components are approximately 50% palmitic acid, 45% oleic acid, 10% linoleic acid, 5% stearic acid, and about 1% myristic acid. It is solid at room temperature due to its high content of the saturated fatty acid palmitic acid, making its overall composition similar to that of beef tallow. The oil content in the fruit flesh is abundant, ranging from 45% to 50%, and the flesh contains an enzyme called lipase, which begins to break down the oil into free fatty acids from the moment of harvest. It is necessary to extract and refine the oil within 24 hours after harvesting.
