Today, I would like to talk about sugar. Ion exchange resins play an important role in the production of sugar.
The representative types of sugar are as follows. (Source: Daito Seito website)
- Granulated sugar: Characterized by high sucrose content, low reducing sugars, and low ash content. In foreign countries, "sugar" typically refers to granulated sugar.
- White sugar: The most commonly used sugar unique to Japan. It is an essential sugar in Japanese cuisine.
- Brown sugar: A moist-textured brown sugar used mainly in cooking, such as in simmered dishes and tsukudani.
- Rock sugar: Large block or crystalline sugar that has been recrystallized from sugar syrup over a long period.
- Cube sugar: Granulated sugar mixed with sugar syrup, pressed into molds, and dried with warm air.
Ion exchange resins are used for the following purposes:
- Sugar purification, decolorization, and desalting
- Purification of amino sugars and acidic sugars
- Separation of oligosaccharides and others
