In November 2024, I visited "Teuchi Soba-dokoro Ontake" located in Hisai, Tsu City, Mie Prefecture. On the back of the business card of the second-generation proprietress, the addresses of the three locations: Iga Ueno main store, Hisai store, and Matsusaka store are written, along with the phrase "Simply devoted to 'genuine quality'". Iga Ueno, where the main store is located, is known for its delicious water, and we have been using spring water from Kiso Town, which is also the source of our living water, because it pairs perfectly with our buckwheat flour.
