"Magic Mannan" is a konjac powder that normally requires the addition of alkali to solidify, but has been specially processed to allow gelation without the need for alkali. It solidifies simply by being dissolved in water or other liquids, and becomes a firm gel through stirring and heating. It retains the characteristics of konjac and is notable for being a heat-resistant gel.
