We would like to introduce the effects of Jerusalem artichoke extract on alleviating symptoms of cedar pollen allergy. Using a pollen allergy model mouse, we compared groups that consumed the tuber extract with those that did not. The results of our examination of "scratching frequency" and "serum IgE concentration," which is a cause of pollen allergy, revealed that the tuber extract significantly reduces allergy symptoms. Additionally, we confirmed similar effects on alleviating cedar pollen allergy symptoms with extracts from Jerusalem artichoke leaves.
